01 / Taking shape

A wrapper. A filling.
One little dumpling.

A good frozen dumpling starts long before it enters the freezer.

02 / Before freezing

Same kind of food.
Different freezing needs.

Explore my product profile. Thickness, starting temperature and loading all affect how heat leaves the center.

Start with the thickest part

Heat must be removed from the center. A change in thickness changes the freezing process, so results for one size cannot simply be applied to another.

Also confirm the recipe, piece weight, target throughput and equipment conditions.

03 / Inside the freezer

The surface cools first.
The center follows.

Move the slider to follow the center temperature.

Teaching illustration only, not a freezing-time or equipment-performance calculation. Confirm the crystallization range and acceptance temperature for the actual product.

04 / Inside the crystals

Tiny ice crystals.
A difference you can taste.

Slower freezingSmaller, more evenly distributedFaster freezing

Faster freezing can help form smaller crystals, reducing tissue damage and thawing drip.

05 / Cold-chain choices

Frozen well.
Keep it that way.
